Feta lovin'

Cutting back on our meat intake hasn't been hard, it's what to make for dinner challenges me. This Feta Cheese Basil Salad has been one of my favorite dishes and has saved me this summer. Enjoy!

Feta Cheese Basil Salad
1/2 c. walnuts
1 pint cherry tomatoes, halved
1 bunch fresh basil leaves, sliced (i also add spinach)
1 bunch green onions, sliced
1 avocado, peeled & diced
1 (6 ounce) pkg crumbled feta with basil sundried tomatoes
1 red bell pepper, seeded & diced
garlic to taste
1 Tbl balsamic vinegar
1 Tbl extra olive oil
walnuts over med heat until golden brown, place ing. in bowl you can season with garlic salt (i don't but I'm sure it's good) Sit about 15 minutes, I actually like to have this sit for a few hours. I think it's better the longer it sits to soak up all the ingredients. Its pretty yummy.
